Winter Fruit Salad and Sweet Ricotta Whip
I don’t believe that healthy eating means you can’t eat dessert! Creating desserts that maximise both nutrition and enjoyment is one of the things that I love — it can be done!
Winter fruits such as apples, pears, bananas, strawberries and passionfruit are rich in vitamin C, potassium, folate and fibre. Combining these with some perfectly sweetened ricotta whip and some crunchy hazelnuts transforms a humble fruit salad to a fancy dessert in its own right! Give it a try!
WHAT YOU NEED
Serves 4
1 banana, sliced
1 pear, core removed and cubed
2 mandarins, peeled and segmented
1 apple, core removed and cubed
1 punnet strawberries, green removed and halved
2 passionfruits
250g smooth ricotta cheese
1 tsp vanilla essence
2 tsp maple syrup
1 tbsp. cream cheese
4 tbsp. hazelnuts, roughly chopped
WHAT TO DO
Combine the banana, pear, apples, mandarins and strawberries in a bowl and toss to combine. Set aside.
Place the ricotta cheese, vanilla essence, maple syrup and cream cheese in a small bowl and using a fork or whisk, stir briskly to combine until smooth.
Fill four glass tumblers with fruit salad. Top with a generous dollop of ricotta mixture, a sprinkle of hazelnuts and passionfruit pulp. Serve and enjoy!
