Country Chicken Soup with Bread

There’s nothing our bodies crave more than a simple yet wholesome soup after a long days work during the cooler winter months. The Cook’s Grocer’s hearty country chicken soup brings together delicious free-range chicken breasts teamed with fresh celery, brown onions, bay leaves and potatoes. All finished off and sided with toasty sourdough, what’s not to love?



2 x 180g free range chicken breasts

1 litre natural chicken stock

1 carrot

1 celery stalk

1 brown onion

1 bay leaf

400g dirty potatoes

2 x sourdough rolls

Serves 2 

Start by grouping and preparing your ingredients into each of the components of the dish. Rinse vegetables and herbs.


Heat oven to 150ºC on bake. Combine chicken in a bowl with olive oil, salt and pepper. Cover and set-aside until ready to cook. Fill your kettle and bring to the boil. Peel potato and cut into 2cm cubes. Peel, quarter and cut the carrot into 1cm pieces. Dice the celery and onion into 1cm pieces.


Bring a large pot with a lid to a medium to high heat with a drizzle of olive oil. Add the carrots, celery and onion. Cook for 2 – 3 minutes. Add potatoes and cook for a further 1 minute. Season with salt and pepper. Add bay leaf and stock. Bring back to the boil then reduce heat to medium-low, cover and simmer for 15 minutes.

While the soup base is cooking, heat a non-stick fry or grill pan to a medium high heat. Cook chicken for 8 – 10 minutes, turning every 2 minutes. Remove from the pan, cover tightly with foil and rest for 2 minutes. Once rested, use two forks to shred each breast.

Stir in chicken and juices; cover pot and continue to simmer for 7 minutes. Taste and then season with salt and pepper if needed. Remove from heat.


Place the bread in the oven for 5-6 minutes or until hot. Ladle soup into bowls and serve with hot bread and butter.
