Funguys: Burgers with a truffle twist

If there was an award for Canberra’s fanciest burger, this may just get the gong.

Picture a meat pattie soaked in truffle butter and cooked on a fire made from hazelnut tree branches, a locally-sourced bun smothered in truffle butter, served with truffle mayonnaise and truffled cheese, then topped with vinaigrette to refresh the palate. Um, is your mouth watering yet? 

It’s just one of the burgers at Funguys Truffle Burgers, set to open at The Truffle Farm in Mount Majura today.

The venture is the brainchild of Damian Brabender, chef at Otis Dining Hall, and Jayson Mesman, from Mount Majura’s The Truffle Farm.

Damian says he and Jayson were looking to find a way to bring truffles into everyday cooking.

“Truffles have a reputation for being a bit fancy and we had so many people wanting to come to the truffle farm for tours that we were booking out, so we thought burgers would be the perfect way to make them more accessible to everyone,” he says.

Situated outside the truffle farm in a 40-foot shipping container, it’s certainly not going to be your average burger joint.

“We’ll be serving up three truffle burgers—the Little, Big and the Trufflesaurus Rex, and the ingredients will be very unique for each of them,” Damian says.

“The little will be more like a cheeseburger, the big will have bacon and the Trufflesaurus is going to be a bit of a surprise.”

Damian jokes the Trufflesaurus Rex burger will probably be “the most expensive burger ever”, with its ingredients a mystery until the opening day tomorrow.

 

There will even be a twist on the classic egg and bacon roll, with a truffle-infused version.

Each burger will be served open (with ease of photography for Instagrammers in mind,) and drinks and coffee will be made available.

For the time being, the space will be takeaway-focused, however, they are looking at adding seating soon. For now, Damian hopes it’s a good excuse to take a drive out to Mount Majura.

“We don’t want to give away too much yet but there’ll be some very special additions in the summer,” he says.

“We just want truffles to be accessible for people and we want people to appreciate what they are. They should be enjoyed by people in Canberra in particular because after all, we are the truffle capital.”
