Award-winning Canberra trattoria Italian & Sons has this week expanded its authentic Italian offering by opening a sophisticated wine bar, Italian & Sons – Bacaro. Since opening its doors in 2009, Italian & Sons has led the charge in the evolution of Canberra’s restaurant culture and instantly received critical recognition.

With the opening of Italian & Sons – Bacaro this week, the family owned and operated The Trimboli Group will again raise the bar by offering locals and visitors a sleek, sexy space to enjoy a quick dinner, a glass of carefully-sourced regional Italian wine, or an authentic snack. The intimate, 50-seat wine bar is tucked at the back of Italian & Sons, on Lonsdale Street in Canberra’s dining hub, Braddon.

The impressive beveled Italian marble bar is the centerpiece of the venue, along with the custom-made, timber fireplace in the center of the room. Restaurateur Pasquale Trimboli says the bar menu showcases honest and authentic Italian fare. “The bar was born from demand from overflowing diners at Italian & Sons. It seemed like a natural progression to offer a casual drop-in bar,” says Trimboli. “We’ve always wanted to introduce an aperitivi culture to Canberra, and Bacaro is an old school, unashamedly traditional cocktail bar celebrating Italian classics.”

The menu features share plates as well as two main meal courses including a house-made pasta and wood fired pizza, which changes daily. The menu includes imported regional Italian formaggi such as a Lombardia blu di capra goats cheese and Sardegna fiore sardo dop sheep milk cheese as well as a selection of house-made cured meats.

Proving there is more to Italian bar snacks than olives and foccacia, other menu highlights include wood fired ‘erbazzone’ (spinach pie) with bitter greens, egg and ricotta, fried Yass Valley rabbit with rosemary, semolina and white carrot and the oxtail ragu alla vaccinara & semolina gnocco romano.

The Trimboli family who also own and operate popular eateries Mezzalira and Da Rosario, grow a selection of their produce on their farm in Gundaroo, and source the remainder from growers in the Canberra region.

The wine list awarded is an expansion of Italian & Sons’ list, with an additional page of magnums available. The list reflects the regionally inspired menu, covering off the best of each region in Italy, and also features local house pours from Mount Majura.
