Tio’s Cerveceria, meet Bar Rochford

Canberra and Mexico are about to collide – all in the name of good booze and even better tacos.

Renowned Sydney tequila and mezcal bar Tio’s Cerveceria will collaborate with Bar Rochford for a one-off cocktail menu over three nights in April. A showcase of smooth tequilas, single village mezcal and ice cold cerveza, there won’t be a plastic sombrero-topped tequila bottle in sight.

From Thursday to Saturday, Melbourne Building darling Rochford will be transformed under the influence of its coastal cousin, known for its fluorescent lighting, laidback vibes, decor ripped straight from a beachfront bar in Mexico and a list of over 100 tequilas, including a number of rare international selections.

Contrary to the popular adage, it seems you can never have enough cooks in the kitchen. The Tio’s team, helmed by Alex ‘Happy’ Gilmour in collaboration with Bar Rochford owner Nick Smith, will be running the drinks menu, while patrons can expect a change from Rochford’s normal menu under the watchful eye of Head Chef Louis Couttopes. Prepare yourself for some seriously scrumptious Mexican. Dan Zivkovich from Barrio will also be lending a hand ahead of the opening of their new venture Taco Taco.

“I have put together a special menu celebrating the food of Mexico, from the beaches of Baja to the jungle of the Yucutan,” explains Louis. “Of course, there will be tacos, but not like you’ve seen before! I’ve been down some pretty weird rabbit holes researching the menu and I think the tacos alone will really surprise people.”

Louis teases a menu including delectable suckling pig, chipotle prawns, plantains and agave, and fresh local tomatillos (a peculiarly green Mexican tomato). And for those looking for that typical Central American kick?

“Our house made range of hot sauce. Lots of hot sauce.”
