Dark Chocolate & Orange Mousse

One of my favourite flavour combinations is chocolate and orange…cannot resist it. Love a good jaffa but serving up a bowl of them for dessert probably isn’t the done thing.
Luckily, Alison Tolley from Divine & Delicious has developed a simple but elegant dessert – Dark Chocolate & Orange Mousse – which brings out the best of this flavour partnership. And it looks absolutely amazing, too!
You’re sure to impress with this dish…
Serves 4
what you need
mousse
250gm good quality dark – chopped
3 eggs
60gm caster sugar
250ml whipping cream
1 orange – zested
garnish
whipped cream, extra to serve
crystallised ginger – chopped finely
candied orange zest
what to do
Put the chocolate in a heatproof bowl.
Half fill a saucepan with water and bring to the boil. Remove from the heat and place the bowl over the saucepan, making sure it is not touching the water. Stir occasionally until the chocolate has melted. Leave to cool.
Using electric beaters, beat the eggs and the sugar in a bowl for 5 mins, or until the mixture is thick, pale and increased in volume. Transfer to a large bowl.
Using a metal spoon, fold the melted chocolate into the egg mixture and leave to cool.
Add the finely grated orange to the cream and lightly whip. Gently fold the lightly whipped cream into the chocolate mixture until just combined.
Spoon into four 250ml (1cup) ramekins or dessert glasses.
Refrigerate for 4hrs or until set.
to serve
Garnish each ramekin with a dollop of whipped cream, and a little crystallised ginger and candied orange zest.
