That’s right—Three Mills Bakery is officially making our dreams crumb true, pairing up with Canberra’s own ONA Coffee to deliver an indulgent box of bread, fresh pastries, and coffee-inspired sweet treats straight to your door.
Macaroon (sorry) in your heart for Three Mills Collective, a culinary collab that can only be described as history in the baking.
A subscription service that delivers a box of one-off deliciousness direct to your door four times a year, each box is handcrafted using seasonal ingredients in collaboration with an iconic brand and brought to life by the best gastronomical minds in the region. Is this Canberra’s most delicious club? We think so.
Each box—filled with bread, pastries and sweets—is only available to Collective subscribers, with the next box being delivered during April. The perfect ‘surprise and delight’ subscription, April’s box has been created in collaboration with Canberra’s beloved ONA Coffee. Baked goods and coffee…think of a better duo, we’ll wait.
So, what does your Three Mills Collective subscription look like exactly? Every box will contain one freshly-baked sourdough, one bakery item (fresh or bake-at-home depending on the season), bake-at-home sweet pastries and bake-at-home savoury pastries, as well as a baker’s pick of either a sweet or savoury bake-at-home item. A vegetarian option is available and you can ‘skip’ a quarter if need be.
While the exact menu remains a fiercely guarded secret until it’s revealed to The Collective members at the start of every month, you’re going to have to crust us when we say each creation is undeniably delicious. Yes, we’ve sampled a prototype of one of the items in April’s Three Mills Bakery x ONA Coffee collaboration box (hint: you can see them in the feature image) and let us tell you, it was delicious.
For Three Mills Executive Chef Bernd Bradmann, this collaboration was a natural one. Not only have Three Mills and ONA established roots in Canberra’s food scene alongside each other, but Three Mills’ Fyshwick bakery and ONA’s Fyshwick roastery are so close one could “throw a croissant over”.
“First, we’re going deep into the world of coffee from sourcing and growing, to cupping and roasting, all to understand how the legends at ONA create their incredible products,” explains Bernd of the collaborative process.
“Then, we’ll be working together to create mind-blowing flavours that highlight the similarities between our brands. Taking you on an exploration of coffee, from the styles you know and love, to the new frontier of coffee varieties and taste profiles.”
For ONA’s Danny Wilson, enhancing the creator-to-customer experience is what this collaboration is all about. Taking tastebuds on a complex flavour journey that honours the ONA flavours we all know and love while elevating them into fresh Three Mills territory.
“What we are starting to do is actually tell the story of coffee and the journey it’s had through changing perceptions and our flavour profiles,” he explains. “Everyone at Three Mills and at ONA are massive flavour nerds, so that’s informing everything and our interests in not just exploring this standard presentation of coffee, but really exploring the depths of beans.”
“Canberra is an incredible place to roast coffee—it’s small enough where you can build these intimate communities, but it’s not too big where you have to meet all these expectations. So, you can build up this level of trust with our customers, which gives you the ability to explore new frontiers regarding flavour.”

Three Mills Collective boxes are delivered January, April, July and October, and you must subscribe by 11:59 pm on the 10th of a delivery month (so that would be 10 April for the next box), to receive that month’s delivery with subscriptions placed after this date will receive a delivery the following quarter.
The Collective delivers to all Canberra suburbs, Queanbeyan, Jerrabomberra and Googong with deliveries made in the last week of each month.
