A dish that will change everything you ever thought about cauliflower

I know it’s not everyone’s favourite vegetable but my family loves cauliflower.

The caveat is, however, that it must be roasted to a state of golden brown crispiness. It was one of the first vegetables I tossed in our air fryer when I was finding my way with it as a new appliance and this roast cauliflower salad with a yoghurt and tahini dressing is now on our weekly menu rotation.

Meanwhile, if you want to hear how an air fryer can change your life then read this.

This dish is a colourful affair which means I feel guilt-free if the kids have had a less than healthy meal the night before (code for pizza). It might look like a lot of ingredients, but once you get in the slicing and dicing mood, you can throw it together in under 30 minutes.

Have I expressed how much I love my air fryer? This is about 15 minutes worth of golden goodness.

You’ll need:

(For air frying)

Half a cauliflower roughly chopped

One tin of chickpeas.

A handful of pine nuts

A tablespoon of chilli oil (our favourite being Ugly Food’s Crunchy Chilli Oil for its highly addictive sesame seedy goodness, you’re welcome).

How hard is it to chop up some veggies?

For the salad:

Two fresh corn cobs, microwaved for four minutes with the kernels cut off the cob.

Two medium tomatoes chopped

Half a red capsicum, diced

Half a small red onion diced finely

One avocado diced

One small cucumber diced

One bunch of flat leafed parsley finely chopped.

Air fried veggies need to cool before they hit the salad bowl.

 

For the dressing:

Three to four tablespoons of yoghurt (we religiously use Farmer’s Union Greek Style)

Half a tablespoon of tahini

One or two cloves of crushed garlic

Quarter to half a red chilli finely diced or dried chilli to taste

Lemon rind zest and juice of half a lemon

Tonnes of salt and pepper

Chopped chives.

Directions:

Throw your cauliflower and chickpeas into a bowl. Add some olive oil to the tablespoon of chilli oil to dilute it then pour the oil over your cauliflower to ensure even distribution.

Throw it in the air fryer and fry on 200 for 15 minutes.

Shake the airfryer to make sure everything gets even colour. When it is all looking golden throw in some pine nuts. These will cook in under a minute so keep an eye on them!

Leave to cool.

In a large bowl place all your fresh chopped veggies and when the air fried ingredients have cooled add them in and mix gently. Drizzle with the yoghurt dressing.

Yes it’s that easy.

Great on its own or serve with a side of salmon, steak or chicken.

Dinner ready in under 25 minutes—roast cauliflower salad with a pork rib cooked in the air fryer.
