Melissa Leung’s Combination Chow Mein

Today, we’re sharing Melissa Leung’s Combination Chow Mein recipe—a food she loves making for her grandchildren—with a side serving of family history.

You could say Melissa has cooking in her bloodstream. From growing up as the daughter of a chef in Hong Kong to opening her own restaurant here in Canberra, her heritage is interwoven with a love of cooking and sharing food, a legacy she has passed on to her own children and grandchildren.

Melissa’s Chow Mein

Ingredients

  • 3 tbsp olive oil
  • 1 tbsp Chinese cooking wine
  •  4 garlic cloves
  • 300g broccoli
  • 300g Chinese cabbage
  • 400g button mushrooms
  • 300g oyster mushrooms
  • 250g beef
  • 250g chicken
  • 4 eggs
  • 750g fresh egg noodles

 

Sauce ingredients

  • 2 tbsp cornflour
  • 6 tbsp water
  • 3 tbsp oyster sauce
  • 1 tbsp soya sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp brown sugar

Instructions

Cook noodles as per packet instructions and set aside. Slice up the meat and marinate in Chinese cooking wine, a pinch of salt and pepper and a dash of soya sauce.

In a bowl, combine all the sauce ingredients together and set aside.

Cut up the vegetables, keeping them all separate.

Steam broccoli and set aside.

In a heavy-based pan, on high heat, heat up 1 tbsp of oil and cook the mushrooms and Chinese cabbage. Cook until soft and set aside.

Using the same pan, add 1 tbsp of olive oil and cook meat. Set aside.

Using the same pan, using the juices from the meat, pan fry the eggs and set aside.

Using the same pan, heat up the remaining 1 tbsp of olive oil and pan fry the egg noodles until it starts to crisp around the edges. Flip the noodles over to cook both sides. Transfer cooked noodles into serving dish.

Using the same pan, cook the garlic for 1 minute then pour in the sauce mixture and let it simmer for 30 seconds.

Add the vegetables to the sauce and combine.

Now add the meat.

Pour meat and vegetables over the pan-fried noodles in the serving dish.

Place egg on top.
