Putting the noodles back into the Night Noodle Markets

Use your noodle this weekend—head to Taiwan Noodle House.

Canberra’s Enlighten Night Noodle Market is back for its sixth year, and it’s looking like it’ll shine brighter than ever before with 23 different food stalls which will serve everything from traditional Asian street food to dishes with Western influences.

As the name suggests, the Night Noodle Market has noodles galore, including Vietnamese pho, Thai pad see ew, Japanese yakisoba and—for the first time ever—hand-pulled noodles.

Taiwan Noodle House will be having their grand launch in Canberra at this year’s festival. The new stall is the brainchild of Matty Forwood and Matt Hryniuk, the same minds behind the ever-popular Bao Stop.

Having stumbled upon beef noodle soup, the national dish of Taiwan, while travelling and researching Asian cuisine, the two immediately knew they wanted to bring it back to their family, friends and fans in Australia—albeit with the unique twist that’s become their trademark.

“We thought it would be a great option to bring to Bao Stop followers and to have everyone enjoy.”

Matty goes on to say, “No one has really done this style of noodles the way I’ve designed them, so it’s an exciting venture and we are even more excited to be launching it to our Canberra followers!”

We couldn’t be more chuffed either. After all, there’s no such thing as too many noodles.

While their idea began as a simple take on beef noodle soup, it’s grown into something even better. Taiwan Noodle House will be serving hand-pulled noodles in a five-spice beef broth alongside cooked brisket, crispy pork belly, char siu roast pork and steamed vegetables.

The broth itself takes 16 hours to make, while the brisket and pork belly take up to two days! Just imagine the amount hard work (and flavour) that goes into that—we’re drooling just thinking about it.

Before deciding on the final product, Matty did tons of research and tested the flavours of his dish for hours. And with only the best ingredients you’ll be sure to taste something that is so much more than your average soup.

Finding authentic hand-pulled noodles isn’t easy, but Taiwan Noodle House found a way: they’re constantly getting shipments of fresh noodles from one of the best companies in Sydney.

Taiwan Noodle House is bringing their A-game and we can’t wait to see how the rest of the noodles at this year’s festival will compare.
