The true gift of an easy salad for Christmas

If the Christmas cooking duties are feeling just a tad overwhelming, here’s the most simple salad to throw at friends and family. And look! We even made it in Christmas colours especially.

OK, so perhaps we are borrowing this particular dish from Italian tables, but the Tomato Caprese fits in just as well to an Aussie Christmas (or any dinner to be honest).

The most important bit is to secure some beautiful burrata cheese, and the rest is easy. Prep takes no more than two minutes. Yes actually. In fact, I can get one of these babies on the table in less (while talking on the phone and folding laundry—it’s that easy).

You will need:

  • Burrata. One generally isn’t enough for my burrata-loving family of four, so if this was a share plate, I would be using three.
  • Four tomatoes, or allocate roughly one tomato per person
  • Basil leaves
  • Olive oil
  • Balsamic glaze

To make:

  • Slice the tomatoes and arrange in a circle
  • Drain the liquid off your burrata and place them in the centre
  • Sprinkle with the basil leaves (alternatively, we like chives on ours)
  • Slosh on some olive oil and balsamic glaze and add liberal salt and pepper.

The best bit? Breaking into the burrata so it oozes its creamy fresh cheesiness all over the tomatoes. Once you’ve made this you will make it a staple.

It’s also a kid-friendly recipe because the burrata has a very mild taste. Now if only I had invested in a burrata company….
