The easiest summer dessert you’ll ever make

Yes, our Associate Editor Emma Macdonald is being serious—this is one deliciously easy dessert.
In fact, it’s so famously simple that we begged her to share the recipe, because who wants to fire up the oven in this heat?
Want something that takes approximately two minutes to prep as an over-the-top summer dessert that will leave you delighted and make every kid in the room sit up and take notice?
I hereby present you with the Smashed Icecream Cake.
Perfect for any sunny summer’s day when the urge to eat tricked up icecream takes hold.
I need to declare that this incredible creation is the brainchild of one of my fave Insta personality Ruth Bruten. As far as I can tell, there is no written recipe, so the idea is just to wing it—I am sure Ruth would approve.
INGREDIENTS
Firstly, you need a few boxes of commercial ice creams.
I use Golden Gaytimes or similar, Chocolate Hearts or ice cream sandwiches and sometimes go for a strawberry or a mint choc-coated icecream depending on which child has nagged the most.
RECIPE
You bring the boxes home from the supermarket and chuck them on the bench to semi-melt.
You grab a spring-form tin and line the bottom with baking paper and when the icecreams are very soft, you unwrap them and throw them into the tin. Most boxes contain six icecreams which is happily the right amount to create each layer.
You could get very decadent and fit up to six boxes of icecreams in if you are feeding the masses. Up to you.
Anyway, remove the sticks and squash the icecreams roughly into place with a spoon. It doesn’t have to be neat. Just chuck each layer on top of the next.
When you’re done (please make sure you get all the sticks out) chuck the tin back into the freezer to firm it all up.
DECORATE
After an hour you should be ready for decoration. And in our case, that calls for an entire bottle of Ice Magic and a crushed Flake on top—no one said it was going to be healthy.
But quick, yes, and quite spectacular to behold. And also, the easiest thing you will do in the kitchen today or any day you need to cool down.
