Pancakes transcend mealtimes, occasions, and cultures. It is a dish that almost everyone loves and can be enjoyed in many different forms, and Canberra is home to some of the best stacks I’ve ever had.
From simple stacks with syrup and ice cream to loaded pancakes with all the toppings you can wish for, Canberra has a pancake for every individual and circumstance.

It’s hard to go wrong with Recess’s all-day breakfast menu, quality coffee, and cosy interiors. If you’re looking for a simple, old-school pancake for a sweet start to your day, Recess delivers and does it unlike any other joint.
Crispy on the outside, soft and fluffy on the inside, the butter melts beautifully into the pancake – does it get any better? (It does). Add as much maple syrup as you’d like, along with extras such as bacon, fruit, and ice cream. “Go big or go home”, I told myself as I loaded all the toppings on.

Bunny Beans Cafe (Kippax & Greenway)

Do we talk about Al’s a lot? Yes. Do we want to share our love of delicious, quality food? Absolutely!
Although Al’s is known for their classic sandwiches, we think their pancakes are severely underrated and deserve just as much love.
Whether you’re looking for a quick bite or something to fill you up for the entire day, Al’s lets you choose how tall you want your stack, starting at $6 per pancake. Topped with whipped butter and maple syrup, this is the closest you can get to having the New York deli experience without leaving Canberra.

Savoury lovers, this one is for you!
If you are getting a sugar rush just from reading this, Penny University offers a delicious break with their Okonomiyaki savoury pancake. Another homage to Japanese pancakes, you can expect savoy cabbage, shiitake mushrooms, sweet potato, shallots, Japanese pickles, green salad, nori and miso mayo, and barbecue sauce.
It’s safe to say this pancake is unlike any other in Canberra; Penny University has once again blown us away with their succulent dishes.

A Bite To Eat (Chifley)

Looking for something a little different to your normal stack? A Bite To Eat takes the pancake game a step further with Banoffee pancakes.
As a serious Banoffee enthusiast, I believe I am qualified to tell you that relishing these thick and decadent delights is the best way to start a slow and meaningful day.
Served with vanilla mascarpone, fresh banana, sticky maple syrup, and salty pretzels, your palate will hit every flavour note.
If you have little ones with simpler taste buds, A Bite To Eat offers a pancake with ice cream and strawberries.
My only regret with this one is sharing a stack with my brother; next time I’m getting my own (sorry not sorry).

I think we can now say Kingston is home to some iconic pancakes!
Dockside puts a healthy and refreshing spin on souffle pancakes (anything can be healthy if you put fruit on it, right?) Trust me, this is a breakfast that’s worth a cheat day. Think house-made ricotta pancakes with organic maple syrup, vanilla mascarpone, Biscoff crumble, seasonal fruits, and vanilla ice cream.
If there’s one thing Dockside specialises in, it’s presentation. Delicately garnished with seasonal fruits, with the syrup served in a little glass jar on the side, the average pancake experience becomes a classy dining vibe.

We don’t have Pancakes On The Rocks in Canberra, but Bloom Room comes pretty close (and they are just as good!). This is where dessert meets breakfast; their pancakes are overflowing with chocolate, sauces, fudge, nuts, fruit, ice cream, and more.
Loaded pancakes are Bloom Room’s speciality, with a pancake for every preference! Are you a chocolate lover? Try their chocolate pancakes with house-made chocolate fudge with the Chocolate Bloom and Chocolate Rhapsody stacks.
Is caramel more your style? Go for the Salted Almond Caramel or Walnut Caramel Bliss pancakes. Looking for a fruity fix? The Berry Breeze and Blue Breeze pancakes are the way to go As someone who loves Italian desserts, the Tiramisu Bliss is my personal recommendation. With homemade chocolate coffee kahlua sauce topped with espresso-infused mascarpone, Bloom Room perfectly replicated my favourite sweet treat as a pancake stack.
