And now that Seibu Prince Hotels & Resorts has taken over the Park Proxi Gibraltar Bowral, formerly the Gibraltar Hotel, there is a whole new world of luxury escapes – as well as a top-tier venue and reception space – waiting in the Southern Highlands.

The company, which operates more than 80 award-winning hotels across Japan, Asia Pacific, the Middle East, Europe, and the US, including 10 ski resorts and 31 golf courses, is all about experiential stays, whether it is for a work conference, wedding, event or simple weekend away (perhaps with a round or two of golf!).
Renamed and refreshed, the luxe venue is located amidst its own rolling golf course, nestled in the picturesque Highlands and overlooking Mount Gibraltar.
Its conference facilities are among the largest and most comprehensive in the region, featuring eight self-contained meeting rooms with one room having a capacity for 280 conference-goers.

The hotel has everything on-site, including 78 luxury suites, a private indoor pool, gym, and the golf course (which takes bookings for the weekends and welcomes any new members for social play). The hotel is also a pretty ten-minute stroll to the boutiques and cafés that make Bowral special for anyone looking to stay and explore offsite.
But where the foodies are concerned, there is possibly no reason to leave the hotel in the first place, thanks to Lotus Dining Group which has recently taken up residence.

Lotus is a fixture on the Sydney dining scene, showcasing pan-Asian cuisine in restaurants at locations including Barangaroo, Double Bay, and Walsh Bay.
The move to Park Proxi Gibraltar Bowral has allowed the Lotus team to branch out into large-scale event catering, under the Marilo brand.
This will come as welcome news to anyone planning a corporate retreat or wedding who wants not only a stunning location but a menu to stand head-and-shoulders above the standard three-course, alternate-plate dinner.
