That good news is that a new restaurant—Louis—will open in Canberra’s south on Friday 2 June, helmed by none other than Aubergine’s Ben Willis.

Located in DOMA’s Realm Precinct, Louis promises to be a “multi-layered experience of fine dining in the classical style along with a sophisticated cocktail bar experience”. Swoon.

Here to transport you from the bustle of Canberra’s Parliamentary Triangle to the warm embrace of a classic European bistro, the restaurant will be located in the former home of Buvette and will feature indoor and outdoor dining spaces with a distinctly European flavour, with interiors designed by Rachel Luchetti of award-winning Sydney-based architecture and interior design firm Luchetti Krelle.

As Culinary Director of the new restaurant, Chef Ben Willis—whose expertise needs no introduction to Canberra foodies—explains the venue will focus on predominately European dishes, including Provencal cuisine.

“I’m excited to be working with the DOMA team to bring this vision to life,” he says.

“I think there is a real opportunity in the market to deliver a product at this level and I’m looking forward to getting the doors open for guests in the coming months.”

Naturally, DOMA Group—whose stable includes luxurious Hotel Realm, The Burbury, Little National Hotel and Hale Spa—is excited to welcome Canberra’s most acclaimed chef to its family.

“Located in the heart of the Parliamentary Triangle in Barton, in a precinct that is fast becoming a foodie drawcard, we have very high hopes for this venture,” says Director of DOMA Hotels, Pat Lonergan.

“It will bring innovation and elevated dining to the city and provide Ben with everything he needs to write a new chapter in his successful career.”

With the restaurant described as “elevated yet embracing, ambitious yet approachable”, it looks perfect for a tête-à-tête or an exclusive group booking (small or large), with snacks and drinks available from 5 pm and dinner from 6 pm.

And with bookings now open, one can only assume that this will be Canberra’s newest fine dining darling.
