Recipe: Mango and Haloumi Salad

There are some food combinations that just can’t be beaten and mango and haloumi would definitely be my nomination.
The salty haloumi and sweet mango is just divine when eaten in the same mouthful! Seriously, if you haven’t tried it before, you must. The textures also work perfectly together – that unique, almost squeaky feel of the haloumi with the soft mango and crisp salad is wonderful. Add some creamy avocado, peppery onion, baby spinach and a white balsamic vinegar and you’ve got a deliciously tasty and light salad that the whole family will love!
With winter finally over and spring creeping in (however slowly) now is the perfect time to start whipping up salads. This one is perfect for a light dinner and I highly recommend making extra so that you can pack the family a healthy, tasty lunch for the next day. We’ve also taken it along to barbecues in summer and it works really well as a side dish to accompany barbecued meats. With a little preparation by chopping the veg, you can even grill the haloumi on the barbecue as well and assemble the salad on the spot. It’s quick, easy and always a crowd pleaser!
Mango and Haloumi Salad
Ingredients (serves 2):
- 160g haloumi, thinly sliced
- ½ avocado, thinly sliced
- 1 mango, cubed
- ½ red onion, thinly sliced
- 4 cups baby spinach
- ½ tbsp. white balsamic vinegar
Method:
- On medium heat, cook the haloumi for 2 minutes, or until golden, on each side.
- Meanwhile, combine avocado, mango, red onion, baby spinach and white balsamic vinegar in a bowl. Mix thoroughly together with cooked haloumi.
- Serve and enjoy!
