Botswana Butchery has announced its opening date and we’re drooling

We have some exciting news: Botswana Butchery is officially opening on Monday 22  January to bring a sophisticated dining experience to the Canberra Centre.

And bookings are now open.

Offering “sumptuous meat, game and seafood dishes” from Australian and New Zealand produce in a relaxed dining setting (complimented by a wine list created by award-winning Group Sommelier Piers Haszard), the restaurant will have two levels of sophisticated dining spaces seating 180 guests.

But despite the name, Botswana Butchery isn’t dishing up African cuisine.

The menu, created by Culinary Director Angel Fernandez, spans several pages – from a  Raw, Cured & Smoked section (oysters, crudo, ceviche and caviar and artisanal Charcuterie) to Mains or From The Ocean (seasonal dishes including duck, pork chop, and whole lobster).

And we dare you to resist the signature section of the menu – From The Butcher’s Block –where 13 of the very best cuts of meat can be found, sourced from highly-sought farms across Australia, like the Slow Roasted Whole Lamb Shoulder that promises to be so tender that the meat falls off the bone and it is served with a spoon and fork.

Add in a wine list that is comprised of 200 different labels (with a focus on the celebrated wineries of the Canberra Wine Growing District as well as championing some of the smaller vignerons) and it will be a true culinary experience for foodies.

Featuring multiple dining areas and a central L-shaped marble bar, the luxurious interior design has been designed by Charlotte Spary and will also include floor to ceiling windows, focal staircase, accent walls, velvet chairs and ambient lighting – perfect for any occasion, from long lunches to celebratory dinners, corporate dining, functions and events to casual drinks with friends.

All in all, it promises to be  a great addition to our local hospitality scene.

This is the fifth Botswana Butchery restaurant, joining two in New Zealand and one in each Sydney and Melbourne.

Botswana Butchery Canberra will open at Shop CG14 on Bunda Street on 22 January. Bookings are open now.
