It seems to be the season for pop-ups – and we’re not mad about it.
The opposite in fact. Because from sweet treats to fancy dinners, Canberra is full of collabs that will have our mouths watering for the next month.
Here’s a mini guide to four food-themed pop-ups happening this spring. Dig in!
Three Mills Bakery x Tokyo Lamington
They’re trendsetters, queue formers, Masterchef maestros, and all-round incredible bakers who bring 24/7 fun to the baking world – and now Tokyo Lamington is collaborating with our very own Three Mills Bakery to bring us Canberra an exclusive range of baked goodies.
With plans to pop up around town, you can keep your eye on what’s happening here – because with lamington flavours that range from Snickers to Strawberry Matcha, we’re very excited to see what they come up with for Canberra.

Ondine x Collector Wine Dinner
Food, fun, and wine – we’re sold. European brasserie Ondine is collaborating with Collector Wines for a special one-night-only event. Serving up drool-worthy delicacies that have been inspired by French cuisine, the six-course food and wine pairing will leave you feeling like you’re in the middle of Europe. Who can say no to baked goats’ cheesecake with blueberries and whipped lemon curd with a glass of 2022 Golden Mean Late Harvest Reisling?

Spring High Tea at Australian Parliament House
Spring is in the air – and what better way to enjoy it than a decadent High Tea at the Queen’s Terrace at Parliament House? Choose from a selection of sweet and savoury treats that have been inspired by the flavours and colours of spring and add a glass of cold sparkling wine for an extra special touch. Paranormal Wines Chef in Residence: Reece Inkpen
Treat your tastebuds to an out-of-this-world experience as Paranormal Wines welcomes a new Chef in residence – Reece Inkpen. Taking over the pots and pans until Sunday 19 November, along with a new face in the kitchen foodies will also be treated to a whole new seasonal menu.
The highlights? Murrumbidgee oyster mushrooms on toast with pepper butter, raw beef with celeriac and mustard greens, crumbed pork neck and green olive tapenade, and apple tarte tatin served with bay leaf cream. And with Paranormal now open until 9 pm on Fridays and Saturdays, it’s the perfect way to say ‘Salut’ to spring!
