Raku partners with one of Japan’s most exclusive sake houses for one night only

Raku will host an exclusive one-night-only dining experience on Tuesday 26 May, partnering with Cellar Mates and luxury Japanese sake house Sake Hundred for an intimate multi-course pairing dinner.
Known globally for its uncompromising approach to craftsmanship and limited production, Sake Hundred has become one of Japan’s most prestigious sake labels, celebrated for redefining sake as a luxury experience.
For one evening only, guests will experience a specially curated menu designed exclusively around the individuality and nuance of each Sake Hundred expression, with a collection of never-before-seen dishes created by the Raku team specifically for the event – a rare move for the restaurant.

The menu will feature dishes including Japanese scallop nori gunkan with peach salsa, kaffir ponzu and burrata paired with Sake Hundred Hakuso, Japanese otoro with plum sauce and coffee oil paired with Sake Hundred Niko, and NSW 8+ wagyu nigiri with foie gras butter and garlic soy chives paired with Sake Hundred Byakko Bespoke.
The evening has been created in collaboration with Sydney-based premium Japanese craft specialists Cellar Mates, who focus on bringing boutique Japanese producers and immersive hospitality experiences to Australian audiences.
Guests will be guided through a “sake journey”, with pairings progressing from lighter and more delicate expressions through to deeper and more complex flavour profiles across the evening.
“The evening is designed to show how the sake evolves from crisp, light notes to deep, complex profiles as the menu progresses,” said Cellar Mates’ Christopher Kam.
“Ideally, guests will walk away with a new appreciation for how luxury sake can transform a meal and a deeper understanding of the craftsmanship behind each bottle.”
