A Wild Thyme opens in Civic

As the Sebel Hotel has opened its doors on London Circuit in the city, so too has a new eatery—Wild Thyme.
The cleverly-named restaurant has a modern Italian cuisine, a large range of fresh seafood, in-house hand-stretched pizzas, and seasonal specials.
While it has only been open for less than two months, early customer feedback suggests the scallops, pan-seared and served on a bed of almond romesco and pear tartare, topped with Avruga caviar with a crispy polenta quenelle is a popular choice.
As is the pesto lamb cutlets, served with duck-fat chats and truss tomatoes, confit of black garlic and a tangy bearnaise sauce.

For deserts, may we suggest the rosewater pannacotta which balances the flavours of rose water, peaches, raspberry and peppercorns perfectly, served with fresh and dried raspberries, a peach and peppercorn glaze and accompanied by pipette of rosewater served on the side.
The wine list focuses on cool-climate products and seeks to celebrate both local wines and wines from other Australian regions with a similar climate.

While the decor is quite high end—think elegant dark wood, charcoal chairs, full-length sheers against full-glass walls and hints of brass—Wild Thyme aims for a warm and slightly playful atmosphere.
Being positioned in a hotel means it caters to a wide range of diners—businesspeople, Members of Parliament, and families who have taken advantage of Canberra travel allowances to enjoy long-overdue reunions, as well as locals who want to try a new restaurant in a central location.
The other advantage of being located in a hotel as that Wild Thyme is open for breakfast and dinner seven days a week.
