Five easy recipes for when you don’t feel like cooking

Posted on

If the thought of cooking makes you want to stick a pin in your eye, let these five easy recipes do the hard work for you.

While you’ll still need to slice, dice and possibly turn on the stove or oven, we can confirm that not only are they super quick and easy to make, but they’re also delicious.

Prawn Cocktail Platter

So simple it’s almost silly, this Prawn Cocktail Platter by our own Emma Macdonald ticks all the boxes. Fast, fresh and a hit for the whole family, she originally created this recipe for Christmas entertaining – but it can be repurposed for any time of year.

With the satisfying mix of crunch from iceberg lettuce, the salty-sweet taste of prawn flesh and the tang of a good cocktail sauce, don’t be surprised if it becomes part of your weekly rotation.

Pasta Alla Vodka

Taking about 10 minutes to throw together and packed full of cream and cheese, you can never go wrong with Pasta Alla Vodka. Originally trending on TikTok in 2022, consider this throwback recipe a reminder of how good it is.

Well worth cutting up some onion, garlic and herbs and turning on the stove, read the recipe here.

Schiacciate Style Green Olive Salad

A great vegetarian option for when you’re in the mood to slice and dice (and not much else), this salad recipe will take you straight to Italy. Made by combining chilli, oregano, fennel seeds, garlic, olive oil and lemon with green olives, it’s great as both a side dish and a main meal.

Hot tip: the recipe asks you to drain two jars of pitted green olives, cover them with clean water and allow them to sit in the fridge for a few hours – or better yet overnight. Why are we telling you this? So you can plan your next lazy meal in advance. You’re welcome.

Deconstructed Nachos Bake

It’s all in the name. Thrown together in under 10 minutes, this recipe is highly adaptable – perfect for when the fridge is looking a bit bare. The hardest part will be cutting up the avocado, tomatoes, corn, onion and herbs and whacking it all in a 180-degree oven for five to 10 minutes.

A little messy to eat but very satisfying, here’s the recipe.

Smashed Ice Cream Cake

Need to make a dessert? Consider this Smashed Ice Cream Cake recipe your saviour. Taking approximately two minutes to prep, an hour to freeze and another two minutes to decorate, it might not be healthy, but it is spectacular to behold.
