Five warming soup recipes for the coldest of days

Baby, it’s cold outside – and that means it’s soup season.
One of the healthiest and most comforting meals you can make during winter, if you’re thinking of adding soup to your weekly meal rotation, we have some recipes that are super (or is that soup-er?) easy to make.
Here are five soup recipes that make hunkering down indoors a pleasure.
Pumpkin Soup
It’s a classic for a reason – and our Associate Editor Emma Macdonald knows how to do it well.
Made with coriander, orange and coconut cream, her recipe is ideal for serious soup weather (and you don’t even need to cut the pumpkin up!). Best served with a dollop of yoghurt and some red chilli for a bit of extra flavour, if you want to make a meal of it, whip up some garlic bread, or grill some sourdough with garlic, butter and parmesan.
And because – in her words – it freezes beautifully, you can meal prep some for the week and pop it in the freezer in preparation for a chilly work week.
Super Green Goodness Soup
It’s all in the name. Packed full of vegetables, this healthy recipe from Philippa Moss makes for an easy lunch or dinner option when you need an energy boost but don’t want to compromise on comfort.
She recommends serving it with a dollop of Greek yoghurt, but you can also use sour cream or crème fraiche, depending on what you prefer. The best part? All you need is a chopping board, knives, a spoon, a stick blender and one large pot. Enjoy.
Spicy Tomato Soup with Crispy Chorizo
This recipe from Anisa Sabet is perfect for when you want to add a little bit of heat to your meal (in more than one way).
With crushed chilli, cumin, and ground coriander, one sip of this spicy soup will heat you from the inside out – and with the addition of chorizo, microgreens, and parmesan, it’s hearty, satisfying and quickly become a staple in your winter rotation.
Creamy Cauliflower and Parsnip Soup
This is the perfect creamy soup without the cream – and as a little bonus, it’s also incredibly healthy (well…depending on how much prosciutto and parmesan you crumble on top. Does the limit exist?).
Rich, tasty and best enjoyed with a warm, crusty bread roll, this recipe from Chrissy Dupé is the mother of creamy winter soups: cauliflower. Well, cauliflower and parsnip. And with a sprinkle of cayenne pepper, paprika, and a pinch of nutmeg, it’s anything but bland and boring.
Potato and Leek Soup
Name something more comforting than the combination of potato, crispy bacon and manchego cheese? This recipe from Anisa Sabet calls for all of these things to create a creamy, moreish soup.
Made in under an hour, this will keep in an airtight container in the fridge for up to three days. Who needs boring rice and veggie when you can meal prep this? Yum.
