EASI is now operating in Canberra and it means that if you want it (whatever…
Here in Canberra, we’re spoiled for choice when it comes to wineries and Shaw Vineyard Estate is no exception.
Located in the cool climate haven of Murrumbateman, it’s the perfect destination for a day trip and now there’s something else to be excited about as Shaw’s new restaurant, Olleyville, is soon to open its doors.
Replacing the vineyard’s previous restaurant, Flint in the Vines, Executive Chef and General Manager Keith Jones explains that Olleyville’s menu has been designed with accessibility in mind – as well as delicious local produce, of course.
“I want people to be able to eat there two times a week, as opposed to it just being for celebratory reasons,” he says.
Keith says the food will be “local, rustic and wholesome,” – part of the restaurant’s creation of a fresh identity while never forgetting its place within the historic Shaw Estate.
Olleyville was the name of the property when it was a wool estate and Keith hopes that by adopting the name, they’ll be keeping the history of the land alive.
The restaurant’s décor will also aim to showcase as much of the estate’s history as possible, with items such as a horse saddle belonging to Isabel, one of the original owners of the property, featured on the wall.
So what about the food?
Keith explains that a highlight of the menu will be a selection of share plates, with dishes such as the whole chicken straight from the wood-fired oven and baked whole baby Cone Bay Barramundi, much of it designed for groups to share.
Other dishes include Sydney rock oysters as an entrée and an Australian artisanal cheese platter for dessert, all of which will be paired with Shaw Vineyard Estate wine, naturally.
Diners can expect to see Olleyville change over a period of about nine months, with a “soft refurbishment” happening before their opening in late August, followed by a more detailed and expansive renovation to coincide with a new cellar door for Shaw Estate later down the track.
But that’s not all.
While Shaw Estate has always been high on Canberra’s list of rustic wedding venues, Keith says he hopes that by revitalising their restaurant offerings, even more engaged couples will be looking their way. They’re even hoping to expand their functions offerings further in the future.
“It’s really about embracing the locals and people who want to get married out there, and creating a venue that suits their needs,” he explains.
Keith says the team will be keen to hear what visitors and locals think after the initial opening, before implementing any changes during the second stage.
“We want [the locals] to embrace what we’re doing, [and] we want to listen to what they want.”
