Soft serve in a croissant cone – say WHAT?

What happens when the weather warms up and you are faced with the difficult choice between a crispy buttery croissant and a serve of utterly delectable soft-serve ice cream?
You head on over to your nearest Wildflour Bakery to combine both.
In what looks like one of the biggest viral dessert trends of 2025, the croissant soft-serve at Wildflour has hit the sweet spot of combining baked treats with something a little extra.
Of course, the team of bakers already nailed this with their line of flavoured and custard-filled croissants, which have been one of their biggest sellers for years now. Our fave? The distinctive dark purple of the Ube.
But the addition of something soft and cold to the perfect structural integrity of one of their croissants is a bit of a genius move, we think.
“It took us a bit of time and experimentation to get it right,” says manager Trent, “but we reckon we nailed it”.

In any case, 170,000 people who viewed in awe on Instagram as they poured their first prototypes at the Fyshwick flagship cannot be wrong, and now soft-serve machines have been installed in Weston, with Kingston and Jamison to follow this weekend!
So what is the actual deal?
First, you pick your choice of French vanilla, Belgian chocolate, Biscoff Cream or Amazon Açai (all house-blended flavours made on site), and then you pick your topping of pistachio or Biscoff sauce with Biscoff crumb or chocolate flakes.
If you want to do the usual Açai fruit combo in a croissant, then go for it.
And of course, you can customise your croissant any way you’d like. The croissants are achingly fresh and flaky with the insides hollowed out to allow for maximum soft-serve content.
Trent said the concept had received an “extremely positive response” from the eating public. And as the weather heats up, Wildflour Fyshwick is going to open late as a dessert spot to help cater for the demand.
Serving an extra bake of its sweet treats plus its inventive roster of drinks (once again we vote for the matcha ube) the store will happily pump out soft serve until 9 pm, Thursday to Sunday.
It sounds like a sure-fire way to make Canberra’s summer sweeter.
