Naughty or Nice: Two ways to eat Rocky Road this Christmas

Hands up if you’re one of those people who loves eating different types of food all at once – in the one mouthful?

Me me me! I am!

I LOVE food combos so it’s no surprise that rocky road is one of my favourite Christmas treats.

It smooshes all these delicious foods together, with chocolate, so you can eat it all in the one mouthful! So convenient!

Anyway, years ago, I never used to like rocky road. One, because I really dislike glace cherries. Two, because the varieties I’d eaten had used really cheap chocolate and three, because the large chucks of marshmallow took over the whole thing. You’ll remember from my cooking chocolate post, a number of months ago, that any chocolate I eat must be held to a certain standard (unless I’m premenstrual, of course).

I recently realised (I know, I’m a slow learner!) that I could make rocky road my own way and chuck in all my favourites, in my preferred proportions. In fact, I have two varieties of rocky road that I make at Christmas. One that involves lollies, marshmallows and oreos and another with dried fruit, nuts and seeds.

I’d suggest that if you’re after something sweet, the first option is bang on! If you’re wanting something a little more wholesome, recipe two is the rocky road for you!

The other great thing about rocky road is if you’re on ‘bring something for dessert’ duty at your next Christmas gathering but you’ve been unorganised, you can make this in under 20 minutes and still ‘wow’ the table!

Lollie & Oreo Rocky Road – For the sweet tooth!

In a medium sized plastic container, place marsh mellows (chopped into quarters), raspberry jelly lollies (cut into quarters), salted peanuts (the hits of salt in amongst the sweet is amazing), clinkers (chopped into quarters), and Oreo biscuits (crushed). Let it get no more than 2 cm high in the container.

Melt one block of good quality chocolate (milk, dark or white) and pour over the other ingredients. Use another type of chocolate and drizzle on top.

Tap the container on the bench to help the chocolate settle and place in the fridge to set. Once chilled, remove from the plastic container and chop into modest sized pieces (everything in moderation and all that!).

Trail Mix Rocky Road – a more wholesome recipe, but just as yum!

Use the method above. This time fill the container (no more than 2cm high) with pumpkin seeds, raw almonds, raw peanuts, dried apricot pieces and dried cranberries. Sprinkle with raw or desiccated shredded coconut.

Pour over a block of melted dark chocolate and tap on the bench to allow the chocolate to settle around the ingredients. Place in the fridge to set.

Once chilled, remove from the container and cut into modest size pieces (moderation still required!).
