Handmade Christmas Giving: Raspberry and Lemon Cordial

The festive season involves lots and lots of social gatherings.

It’s usually a general rule that when you turn up to someone’s house for a celebration, you really should be bearing a gift for the host!

Instead of going out and buying countless amounts of expensive gifts, why not give this Raspberry and Lemon Cordial a go?. Both the kids and adults will love you for it!

Raspberry and Lemon Cordial

  • 4 cups water
  • 3 cups sugar (white or caster)
  • 2 tablespoons of lemon zest
  • ½ cup lemon juice
  • 2 1/2 cups frozen raspberries

In a large saucepan, combine the water, sugar, lemon zest and lemon juice and stir over high heat until the sugar dissolves. Bring to the boil and cook for 10 minutes stirring occasionally to avoid burning.

Carefully strain into another saucepan. Once cooled, strain into sterilised bottles. This recipe will make up to 1 litre of cordial. If you want to gift it up to a few people, strain it into small bottles.

Keep refrigerated up to two weeks.

Ways to Serve

  • Add a splash of cordial to a cup of ice and add some cold sparkling water.
  • Combine a splash of cordial with vodka and a slice of lemon, mint, ice and soda water.
