Vegan Scones

Taylor from Vegan on Mondays uploaded a scone recipe that tastes just like a regular scone, served with strawberry jam and whipped coconut cream.

If you’re not a fan of anything coconut-flavoured, you can swap the coconut milk used in the scone batter with another non-dairy milk option, and there are other vegan whipped cream options available that you can buy in the supermarket that work just as well.

Lemon Slice

Taken and adapted from a Sweet Bones’ recipe, Veet transformed this lemon slice for a gluten-free and vegan-friendly audience.

With the food processor as your friend, the ingredients are mixed to form this deliciously tangy slice. Just know that these are so irresistible, you may be tempted to eat more than one slice at a time.

Very Berry Nice Cream

Deb Kaloper’s Berry Nice Cream is simple and perfect for the warmer weather that’s on its way. With just four ingredients and a straight-forward three-step method, you can have your vegan ice cream served immediately as a soft serve or left in the freezer for a few hours before diving into.

For a healthier alternative to this recipe, (or if you don’t want the coconut flavour to surpass the berries), you can use almond milk instead of the coconut cream that’s listed, and it will still be super tasty.

Peanut Butter Chocolate Mousse

Have you ever thought that avocado would be an ingredient in a chocolate mousse? If you haven’t; think again! With Melanie Baker’s recipe, this single-serve peanut butter chocolate mousse includes half an avocado to create that creamy texture that is well-known and loved across all mousse recipes.

With the right amount of cocoa and peanut butter, you won’t even be able to taste the avocado, and you will have a rich, luscious mousse to enjoy.
